Roasted Pork Preparation

Prepare the Pork
Preheat the oven to 300°F (150°C). In a small bowl, combine garlic, cumin, paprika, oregano, salt, black pepper, olive oil, and lime juice to create a marinade.

Marinate the Pork
Rub the marinade all over the pork shoulder, ensuring it's well coated. Cover and let it marinate for at least 1 hour, or overnight in the refrigerator for best flavor.

Shred the Pork
Once cooked, remove the pork from the oven, let it rest for 15 minutes, then shred it with two forks.
Pico de Gallo Preparation

Chop the Ingredients
Finely chop the tomatoes, onion, and cilantro. Place them in a mixing bowl.

Mix the Pico de Gallo
Add lime juice and salt to the chopped vegetables. Stir well to combine. Let sit for at least 15 minutes to allow the flavors to meld.
Mediterranean Chimichurri Preparation

Blend the Chimichurri
In a blender or food processor, combine parsley, oregano, garlic, red pepper flakes, red wine vinegar, olive oil, salt, and black pepper. Blend until smooth.

Adjust Seasoning
Taste the chimichurri and adjust seasoning if necessary, adding more salt, pepper, or vinegar to suit your taste.
