Method

Preparation of Marinade

  1. 1

    Make the Marinade

In a medium bowl, whisk together the olive oil, soy sauce, honey, minced garlic, chopped rosemary, salt, and black pepper until well combined.

Marinating the Pork

  1. 2

    Marinate the Pork

Place the pork tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight for the best flavor.

Cooking the Pork

  1. 3

    Preheat and Prepare

Preheat your oven to 400°F (200°C). Remove the pork from the marinade and let it sit at room temperature for about 15 minutes.

  2. 4

    Sear the Pork

In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Add the pork tenderloin and sear on all sides until browned, about 2-3 minutes per side.

  3. 5

    Roast the Pork

Transfer the skillet to the preheated oven and roast the pork for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

  4. 6

    Rest the Pork

Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing.

Preparing the Vegetables

  1. 7

    Prepare the Vegetables

While the pork is roasting, toss the trimmed asparagus and halved cherry tomatoes with olive oil, salt, and black pepper in a mixing bowl.

  2. 8

    Roast the Vegetables

Spread the vegetables on a baking sheet and roast in the oven alongside the pork for the last 10-15 minutes of cooking time, until tender and slightly caramelized.

Serving

  1. 9

    Slice and Serve

After the pork has rested, slice it into medallions. Serve the slices alongside the roasted asparagus and cherry tomatoes.
