Method
Preparation
- 1
Prepare the Meat
Take the picanha beef cut and trim off any excess fat, leaving about a 1/4 inch of fat cap for flavor. Cut the meat into a shape resembling a triangle, with the grain of the meat in mind.
- 2
Marinate (Optional)
In a small bowl, mix olive oil, lime juice, and chopped parsley. Rub this mixture all over the picanha, ensuring it's well coated. Cover with plastic wrap and let marinate in the refrigerator for at least 1 hour, or overnight for best results.
Cooking
- 3
Season the Meat
Remove the picanha from the refrigerator, if marinated. Generously season all sides of the meat with kosher salt, black pepper, and garlic powder.
- 4
Preheat the Grill
Preheat your grill to medium-high heat (about 400°F).
- 5
- 6
Rest the Meat
Once cooked, remove the picanha from the grill and let it rest for 10 minutes. This allows the juices to redistribute.
- 7
Slice and Serve
Slice the picanha against the grain into thin slices and serve immediately. Enjoy!
