Preparing the Potatoes

Peel and Cut Potatoes
Peel the Russet potatoes and cut them into 1-inch cubes.

Soak Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

Fry the Potatoes
Carefully add the dried potato cubes to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

Season Potatoes
While the potatoes are still hot, sprinkle them with salt and black pepper to taste.
Making the Spicy Tomato Sauce

Sauté Garlic
Add the minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn them.

Add Spices and Tomatoes
Stir in the crushed red pepper flakes, canned crushed tomatoes, smoked paprika, salt, black pepper, and sugar.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally until it thickens slightly.

Finish the Sauce
Remove from heat and stir in the chopped fresh parsley.
Serving

Plate the Dish
Serve the crispy fried potatoes on a plate and generously drizzle the spicy tomato sauce over them.

Add additional chopped parsley for garnish if desired.
