Method

Preparing the Potatoes

    Boil the Potatoes

    Place the medium-sized potatoes in a large pot and cover them with water. Add 1 teaspoon of salt and bring to a boil over high heat.

    Cook the Potatoes

    Once boiling, reduce the heat to medium and let the potatoes cook for about 20-25 minutes until fork-tender. Check occasionally.

    Drain and Cool

    Once cooked, drain the potatoes and let them cool for a few minutes. Peel them if desired, or leave the skins on for a rustic look.

    Cut the Potatoes

    Cut the potatoes into wedges or cubes, depending on your preference.

    Drizzle with Olive Oil

    Place the cut potatoes in a serving dish and drizzle with 2 tablespoons of olive oil. Toss gently to coat.

Making the Alioli Sauce

    Prepare the Garlic

    Peel the garlic cloves and crush them using a mortar and pestle or finely chop them.

    Combine Ingredients

    In a bowl, combine the crushed garlic, egg yolk, and lemon juice.

    Emulsify the Sauce

    Slowly drizzle in 1 cup of olive oil while whisking continuously until the mixture thickens into a creamy consistency.

    Season the Sauce

    Add salt to taste and whisk again to combine. Adjust the consistency by adding a bit of water if needed.

Serving

    Pour the alioli sauce over the prepared potatoes or serve it on the side for dipping. Enjoy!
