Baked Goods

Smoked Butter

Extra Virgin Olive Oil (EVOO)

Method

Baked Goods

  1. 1

    Prepare the Dough

In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

  2. 2

    Mix the Ingredients

Add flour, salt, and olive oil to the yeast mixture. Stir until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

  5. 5

    Shape and Second Rise

Punch down the dough, shape it into a loaf or rolls, and place on a baking tray. Cover and let it rise for another 30 minutes.

  6. 6

    Bake

Preheat the oven to 375°F (190°C). Bake for 25-30 minutes or until golden brown on top.

Smoked Butter

  1. 7

    Prepare the Smoker

Soak wood chips in water for at least 30 minutes. Drain and place in your smoker or grill.

  2. 8

    Smoke the Butter

Place the unsalted butter in a heatproof dish and smoke for about 30 minutes, until infused with a smoky flavor.

  3. 9

    Cool and Store

Allow the smoked butter to cool and then store it in the refrigerator until ready to serve.

House-Made Jam

  1. 10

    Prepare the Berries

Wash and chop the mixed berries into small pieces.

  2. 11

    Cook the Jam

In a medium saucepan, combine the berries, sugar, and lemon juice. Cook over medium heat until the mixture thickens, about 15-20 minutes.

  3. 12

    Cool and Store

Allow the jam to cool before transferring it to a jar. Store in the refrigerator for up to two weeks.

Extra Virgin Olive Oil (EVOO)

  1. 13

    Serve

Drizzle the extra virgin olive oil on a serving plate for dipping with the baked goods.
