    Prepare the Bread

    Slice the crusty bread into 1-inch thick slices. You will need enough slices to serve the desired number of people.

    Toast the Bread

    Preheat your grill or oven to medium-high heat. Place the bread slices on the grill or a baking sheet and toast for about 2-3 minutes on each side, or until they are golden brown and crispy.

Tomato Topping

    Prepare the Tomatoes

    While the bread is toasting, wash the ripe tomatoes. Cut them in half and remove the core. Using a box grater or a food processor, grate the tomatoes into a bowl. Discard the skins.

    Add Garlic

    Peel and finely mince the garlic cloves. Add the minced garlic to the grated tomatoes.

    Season the Mixture

    Add the salt and a drizzle of 2 tablespoons of extra virgin olive oil to the tomato and garlic mixture. Mix until well combined. Taste and adjust seasoning with additional salt and black pepper if needed.

Assembly

    Once the bread is toasted, remove it from the grill or oven and let it cool slightly. Spoon the tomato mixture generously over each slice of bread.
