Prepare the Ingredients
Drain and rinse the canned chickpeas under cold water. Pat them dry with a paper towel to remove excess moisture.

Chop the Chorizo
Slice the chorizo sausage into small pieces, about 1/4 inch thick.

Prepare the Sofrito
If using homemade sofrito, ensure it is ready to use. If using store-bought, have it on hand.
Cooking

Sauté the Chorizo
In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook for about 3-4 minutes, until it starts to brown and release its oils.

Add Ground Beef
Add the ground beef to the skillet with the chorizo. Cook for another 5-7 minutes, breaking it up with a spatula until fully cooked and browned.

Add Chickpeas and Seasoning
Stir in the drained chickpeas, paprika, salt, and black pepper. Mix well to combine all ingredients.

Cook Until Crispy
Allow the mixture to cook for an additional 8-10 minutes, stirring occasionally, until the chickpeas become crispy and golden.

Add Sofrito
Finally, stir in the sofrito and cook for another 2-3 minutes until everything is heated through.
