    Remove Steaks from Fridge

    Take the filet mignon steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steaks

    Pat the steaks dry with paper towels. Sprinkle salt and black pepper generously on both sides of the steaks.

Cooking

    Preheat the Pan

    Heat a heavy skillet (preferably cast iron) over medium-high heat. Add olive oil and allow it to heat until shimmering but not smoking.

    Sear the Steaks

    Place the seasoned filet mignon in the hot skillet. Sear for about 4-5 minutes on one side without moving it. This will create a nice crust.

    Flip the Steaks

    Using tongs, gently flip the steaks and sear the other side for an additional 4-5 minutes for medium-rare. Adjust the time if you prefer your steak more or less done.

    Add Aromatics (Optional)

    If using, add fresh rosemary and crushed garlic cloves to the skillet during the last 2 minutes of cooking. Spoon the infused oil over the steaks for added flavor.

    Check Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F (54°C).

Resting and Serving

    Rest the Steaks

    Remove the steaks from the skillet and transfer them to a cutting board. Let them rest for at least 5 minutes to allow the juices to redistribute.

    Slice and Serve
