Preparation of Filling

    Chop the Ham

    Finely chop the cooked ham and set aside.

    Make the Roux

    In a saucepan, melt the butter over medium heat. Once melted, add the all-purpose flour, stirring continuously for about 2 minutes until the mixture is golden.

    Add Milk

    Gradually pour in the milk, whisking constantly to avoid lumps. Continue to cook until the mixture thickens, approximately 5-7 minutes.

    Season the Mixture

    Add the salt, black pepper, nutmeg, and chopped parsley to the thickened mixture. Stir to combine.

    Incorporate Ham

    Fold in the chopped ham into the mixture, ensuring it is well distributed. Remove from the heat and let cool.

Forming Croquettes

    Prepare for Dipping

    In a mixing bowl, beat the eggs. Place the breadcrumbs in another shallow dish.

    Shape the Croquettes

    Once the filling is cool, take small portions and shape them into oval or cylindrical croquettes.

    Dip each croquette first into the beaten eggs and then roll in the breadcrumbs to coat evenly.

Frying

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Croquettes

    Carefully add the croquettes in batches to the hot oil, frying for about 3-4 minutes on each side until golden brown.

    Remove the croquettes using a slotted spoon and place them on a paper towel to drain excess oil. Serve hot.
