    Start by slicing the chorizo sausage into thick rounds (about 1 inch each). Mince the garlic cloves and chop the onion into small pieces. Set aside.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until the onion is translucent and fragrant.

    Cook the Chorizo

    Add the sliced chorizo sausage to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and has released some of its oils.

    Add the Wine and Seasonings

    Pour the red wine into the skillet with the cooked chorizo. Add the bay leaves and black pepper. Stir to combine, and bring the mixture to a gentle simmer.

    Allow the chorizo to simmer in the red wine for about 15-20 minutes, uncovered, until the sauce reduces slightly and thickens. Stir occasionally to prevent sticking.
