Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk together the large eggs and granulated sugar until the mixture is pale and thick, about 3-4 minutes.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture until just combined. Be careful not to deflate the eggs.

Whip Cream
In another bowl, whip the heavy cream until soft peaks form. Add the vanilla extract and a pinch of salt, and continue whipping until stiff peaks form.

Fold in Whipped Cream
Gently fold the whipped cream into the chocolate mixture in three additions, ensuring that it remains light and airy.

Divide the mousse into serving cups or bowls and refrigerate for at least 2 hours, or until set.
