Method

Gelato Preparation

    Make the Gelato Base

    In a mixing bowl, combine the mascarpone cheese, guava puree, heavy cream, sugar, vanilla extract, and a pinch of salt. Whisk until smooth and well combined.

    Chill the Mixture

    Cover the bowl and refrigerate for at least 2 hours or until the mixture is cold.

    Churn the Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for a minimum of 4 hours until firm.

Guava Shells in Syrup Preparation

    Prepare the Syrup

    In a saucepan, combine water and sugar, and bring to a boil over medium heat. Stir until the sugar is dissolved.

    Add Guava Shells

    Add the guava shells and lemon juice to the syrup. Reduce heat and simmer for about 15 minutes until the guavas are tender and the syrup thickens slightly.

    Cool the Mixture

    Remove from heat and let the mixture cool to room temperature.

Galleta María Crumbs Preparation

    Crush the Cookies

    Place the galleta María cookies in a food processor and pulse until finely crushed.

    Combine with Butter

    In a bowl, mix the crushed cookies with melted butter until well combined.

Guava Gel Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder with 50 ml of water. Let it sit for 5 minutes to bloom.

    Prepare the Gel

    In a saucepan, heat the guava puree until warm. Add the bloomed gelatin and stir until fully dissolved. Remove from heat and let it cool slightly.

Assembly

    Layer the Components

    In serving glasses, start with a layer of galleta María crumbs, followed by a layer of guava shells in syrup, then a scoop of guava gelato, and a drizzle of guava gel.

    Garnish and Serve

    Top with fresh mint leaves for garnish and serve immediately.
