Preparing the Potatoes

    Peel and Cut Potatoes

    Peel the russet potatoes and cut them into bite-sized cubes, approximately 1 inch in size.

    Soak Potatoes

    Soak the potato cubes in cold water for at least 30 minutes to remove excess starch, which helps them become crispy.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a clean towel to remove moisture.

    Fry the Potatoes

    In a large pan, heat 1 cup of olive oil over medium-high heat. Once hot, add the potato cubes in batches and fry until golden brown and crispy, about 8-10 minutes per batch. Remove and place on paper towels to drain excess oil. Sprinkle with salt.

Making the Spicy Tomato Sauce

    Sauté Onions and Garlic

    In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-5 minutes.

    Add Tomato Ingredients

    Stir in the tomato paste, canned diced tomatoes, red pepper flakes, smoked paprika, sugar, salt, and black pepper. Mix well.

    Simmer the Sauce

    Bring the sauce to a simmer and let it cook for 10-15 minutes, stirring occasionally until thickened.

    Finish the Sauce

    Remove from heat and stir in the chopped fresh parsley for added flavor.

Serving

    Plate and Serve

    Serve the crispy potatoes hot, drizzled with the spicy tomato sauce. Optionally, garnish with extra parsley.
