    Prepare the Potatoes

    In a pot of boiling salted water, add the breakfast potatoes and cook until fork-tender, about 10-15 minutes. Drain and set aside.

    Season the Steak

    Pat the flat iron steak dry with paper towels. Season both sides with salt, black pepper, and garlic powder.

    Grill the Steak

    Preheat the grill or grill pan over medium-high heat. Add the olive oil. Grill the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

    In a non-stick skillet, cook the eggs to your preference (scrambled, fried, or poached). Season with salt and pepper to taste.

    In the same skillet, add the cooked breakfast potatoes and sauté until golden brown and crispy, about 5 minutes. Season with salt and pepper, and sprinkle with fresh parsley.

    On a plate, arrange the sliced steak, cooked eggs, and sautéed breakfast potatoes. Drizzle the bordelaise sauce over the steak and serve immediately.
