    Sauté the Mushrooms

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms, sprinkle with salt and black pepper, and sauté until they are golden brown and tender, about 5-7 minutes.

    Prepare the Bread

    While the mushrooms are cooking, preheat a separate skillet or griddle over medium heat. Brush one side of each slice of sourdough bread with the remaining olive oil.

    Assemble the Sandwich

    On the non-oiled side of two slices of sourdough, layer the sautéed mushrooms, fresh spinach, and crumbled goat cheese. Top with the other two slices of bread, oiled side up.

    Grill the Sandwich

    Place the assembled sandwiches on the preheated skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is slightly melted.

    Serve

    Remove the sandwiches from the skillet and let them rest for a minute. Cut in half and serve with fries on the side.
