Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into long strips, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes them crispier.

Dry the Fries
Drain the fries and pat them dry with a clean kitchen towel to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

Fry the Potatoes
Carefully add a batch of fries to the hot oil. Fry them for about 4-5 minutes, or until they are golden brown and crispy. Avoid overcrowding the pot.

Remove the fries using a slotted spoon and drain them on paper towels. While they are still hot, sprinkle with salt and pepper to taste.
