Cooking Instructions

  1. 1

    Prepare the Ingredients

Chop the onion, bell pepper, and celery (the holy trinity). Dice the garlic and set aside.

  2. 2

    Cook the Meats

In a large pot, heat the oil over medium heat. Add the andouille sausage, duck breast, and chicken thighs. Brown the meats on all sides, then remove and set aside.

  3. 3

    Sauté the Vegetables

In the same pot, add the chopped onion, bell pepper, celery, and garlic. Sauté until softened, about 5-7 minutes.

  4. 4

    Combine Ingredients

Return the browned meats to the pot. Add the diced tomatoes, chicken stock, bay leaves, thyme, cayenne pepper, salt, and black pepper.

  5. 5

    Simmer the Gumbo

Bring the gumbo to a boil, then reduce the heat and let it simmer for about 45 minutes, stirring occasionally.

  6. 6

    Prepare the Rice

While the gumbo is simmering, cook the rice according to package instructions.

  7. 7

    Serve

Remove the bay leaves from the gumbo. Serve hot over a scoop of rice and garnish with parsley.
