Prepare the Chicken

Preheat your oven to 425°F (220°C). Season the chicken breasts with olive oil, salt, and black pepper on both sides.

Roast the Chicken

Place the seasoned chicken breasts on a baking sheet and roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest for 5 minutes before slicing.

Cook the Potatoes

While the chicken is roasting, wash and cube the heirloom potatoes. Toss them in olive oil, salt, and black pepper. Spread them out on a separate baking sheet and roast for 20-25 minutes until crispy and golden.

Make the Corn Salsa

In a bowl, combine the corn, diced red onion, chopped cilantro, and lime juice. Mix well and adjust seasoning with salt if needed.

Prepare the Chicken Jus

In a saucepan, add the chicken stock and bring to a simmer. Reduce for 10-15 minutes until slightly thickened. Optionally, you can whisk in a bit of pan drippings from the roasted chicken for added flavor.

Serve

Plate the sliced roasted chicken breast alongside the crispy heirloom potatoes and top with corn salsa. Drizzle with chicken jus before serving.
