    Prepare the Potatoes

    Preheat the oven to 200°C (400°F). Wash and dice the potatoes into small cubes. Toss them with olive oil, salt, and black pepper, then spread them on a baking sheet. Roast in the oven for 25-30 minutes or until crispy and golden brown, tossing halfway through.

    Cook the Green Beans

    While the potatoes are roasting, bring a pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until bright green and tender-crisp. Drain and set aside.

    Prepare the Garlic Lemon Beurre Blanc

    In a small saucepan, melt 30 grams of butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add lemon juice and simmer for 3-4 minutes to reduce slightly. Gradually whisk in the remaining butter until melted and the sauce is smooth. Season with salt and pepper to taste.

    Cook the Red Trout

    In a skillet, heat a tablespoon of olive oil over medium-high heat. Season the trout fillets with salt and pepper. Place them skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until cooked through.

    Serve

    To serve, place the crispy potatoes on a plate, top with the cooked red trout, and drizzle the garlic lemon beurre blanc over the fish. Add the blanched green beans on the side.
