Marinate the Pork
In a bowl, combine the mojo marinade ingredients. Add the pork shoulder and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Cook the Pork
Preheat the grill or oven. Remove the pork from the marinade and cook until the internal temperature reaches 190°F (88°C) for tender, pull-apart meat. This should take about 4-6 hours on low heat.

Prepare the Sandwich
Once the pork is cooked, shred it with two forks. Toast your choice of bread. Layer the shredded pork, sliced smoked ham, house pickles, and dijonnaise on the bread.

Close the sandwich, slice in half, and serve immediately while warm.
