Chocolate Mousse

Melt the Chocolates
In separate bowls, melt the dark and white chocolate using a double boiler or microwave until smooth. Let cool slightly.

Whip the Cream
In a large mixing bowl, whip the heavy cream until soft peaks form. Set aside.

Combine Ingredients
Gently fold the melted dark chocolate into the egg mixture, then fold in half of the whipped cream. Repeat with the white chocolate.

Chill
Spoon the mousse into serving glasses and refrigerate for at least 2 hours until set.
Cherry Jelly

Prepare the Jelly
In a saucepan, heat the cherry juice and sugar until dissolved. Sprinkle gelatin over the mixture and stir until completely dissolved.

Set the Jelly
Pour the cherry mixture into a shallow dish and refrigerate until firm, about 2-3 hours.
Chocolate Straws

Make Chocolate Straws
Melt the dark chocolate and spread it into thin lines on a parchment paper. Once set, cut into straw shapes.
