    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5-10 minutes until it blooms.

    Combine Cream and Milk

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Split the vanilla bean lengthwise, scrape the seeds into the mixture, and add the bean pod as well.

    Heat the Mixture

    Heat the saucepan over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot (but not boiling). Remove from heat.

    Add Gelatin

    Remove the vanilla bean pod and stir in the bloomed gelatin until fully dissolved.

    Chill the Mixture

    Pour the mixture into individual serving glasses or molds. Refrigerate for at least 4 hours or until set.

Cherry Amaretto Sauce

    Cook the Cherries

    In a small saucepan, combine the pitted cherries, granulated sugar, amaretto liqueur, and lemon juice.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes until the cherries soften and the sauce thickens slightly.

    Cool the Sauce

    Remove from heat and let it cool to room temperature. The sauce will thicken further as it cools.
