SPANISH OIL DIP

Corvina, Rondinella & Molinara. This deep ruby-red wine has powerful, complex aromas of dried plums and balsamic (anise, fennel, mint) traces. Quite dry (not sweet) on the palate, soft and with bright acidity, the wine shows flavors of baked cherry, chocolate and cinnamon. Structured but noble, delicate tannins precede a long finish.

Select and harvest the Corvina, Rondinella, and Molinara grapes, ensuring they are ripe and of high quality.

Harvesting Grapes

Crush the harvested grapes gently to release their juice, making sure to separate the stems from the fruit.

Crushing Grapes

Transfer the crushed grapes into a fermentation tank. Allow the mixture to ferment for approximately 7-10 days at a controlled temperature, monitoring the sugar levels.

Fermentation Process

After fermentation, add dried plums, balsamic vinegar, anise seeds, fennel seeds, and fresh mint leaves to the mixture, stirring gently to incorporate.

Adding Aromatic Elements

Allow the mixture to macerate for another 5-7 days to extract flavors and aromas from the additional ingredients.

Maceration

Filter the wine to remove solids and transfer it into sterilized bottles. Add baked cherry juice, grated chocolate, ground cinnamon, and noble tannins extract before sealing the bottles.

Bottling Process

Store the bottles in a cool, dark place for at least 12 months to allow the flavors to mature and develop complexity.

Aging the Wine

After aging, the wine is ready to be served. Pour into appropriate wine glasses, allowing it to breathe for a few minutes before tasting.
