Harvest the Nebbiolo grapes at optimal ripeness, ensuring that the fruit is healthy and free from disease.

Harvesting

Destem and crush the harvested grapes to release the juice. This can be done manually or using a mechanical crusher.

Crushing and Destemming

Transfer the crushed grapes, including skins, into fermentation tanks. Add the yeast to initiate fermentation. Maintain a temperature between 25-30°C (77-86°F) for about 7-10 days.

Fermentation

After fermentation, press the wine to separate the liquid from the solid grape skins. This can be done using a wine press.

Pressing

Allow the wine to undergo malolactic fermentation, which softens the acidity and adds complexity. This usually takes a few weeks.

Malolactic Fermentation

Transfer the wine into large oak casks for aging. Allow the wine to mature for 24 months, which will develop its flavors and tannins.

Aging

After aging, filter and bottle the wine. Ensure that the bottles are clean and sterilized to preserve the wine's quality.

Bottling

Label the bottles appropriately to indicate that this is a 'Produttori del Barbaresco' vintage.

Corvina, Rondinella & Molinara. This deep ruby-red wine has powerful, complex aromas of dried plums and balsamic (anise, fennel, mint) traces. Quite dry (not sweet) on the palate, soft and with bright acidity, the wine shows flavors of baked cherry, chocolate and cinnamon. Structured but noble, delicate tannins precede a long finish.
