    Prepare the Pork Chops

    Season both sides of the pork chops generously with salt and black pepper. Allow them to sit at room temperature for about 15-20 minutes.

    Sear the Pork Chops

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned pork chops to the pan. Sear for about 4-5 minutes on each side or until the internal temperature reaches 145°F (63°C) for medium doneness.

    Rest the Pork Chops

    Remove the pork chops from the skillet and let them rest on a plate, loosely covered with foil, while you prepare the sauce.

    Make the Sauce

    In the same skillet, reduce the heat to medium and add the butter. Allow it to melt, scraping up any browned bits from the bottom of the pan. Once melted, carefully pour in the brandy and cook for 1-2 minutes to deglaze, stirring constantly.

    Finish the Sauce

    Remove the skillet from the heat and stir in the chopped fresh parsley. Season with additional salt and pepper to taste.

    Plate the rested pork chops and drizzle the brandy and parsley butter sauce over them. Serve immediately.
