Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are fully coated with butter.

Bake the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for about 10 minutes, until set and slightly golden. Remove from the oven and set aside to cool.
Cheesecake Filling

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Gradually add in the granulated sugar and continue to beat until well combined.

Add Remaining Ingredients
Add the sour cream, pistachio paste, eggs, and vanilla extract to the cream cheese mixture. Beat on low speed until just combined, being careful not to overmix to avoid incorporating too much air.

Pour and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 350°F (175°C) for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.

After the cheesecake has cooled to room temperature, refrigerate for at least 4 hours, or overnight for best results.
White Chocolate Sauce

Prepare the Sauce
In a small saucepan over low heat, combine the chopped white chocolate and heavy cream. Stir continuously until the chocolate is completely melted and the sauce is smooth.

Remove from heat and let the sauce cool slightly before drizzling over the chilled cheesecake.
