Pasta Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced bell pepper, zucchini, cherry tomatoes, broccoli florets, and sliced carrot. Cook for about 5-7 minutes until the vegetables are tender but still crisp.

Add Spinach
Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.

Combine Sauce Ingredients
Pour the vegetable broth into the skillet with the sautéed vegetables. Add salt, black pepper, and red pepper flakes. Stir to combine and let it simmer for about 3 minutes.

Add Pasta and Cheese
Add the cooked pasta to the skillet and toss to combine with the sauce and vegetables. Sprinkle in the grated Parmesan cheese and mix until the cheese is melted and everything is well incorporated.
