To Prepare the Panna Cotta

Prepare Gelatin
In a small bowl, combine the cold water and gelatin powder. Allow it to sit for about 5-10 minutes to bloom.

Heat Cream Mixture
In a saucepan over medium heat, combine heavy cream, whole milk, and granulated sugar. Stir until the sugar dissolves and the mixture is hot, but not boiling.

Add Gelatin
Once the cream mixture is hot, remove it from heat. Stir in the bloomed gelatin until completely dissolved. Add vanilla extract and mix well.

Pour into Molds
Pour the mixture into individual serving cups or molds. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
To Prepare the Berry Compote

Cook Berries
In a saucepan, combine mixed berries, granulated sugar, and lemon juice over medium heat. Cook for about 10-15 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.

Cool Compote
Remove from heat and allow the berry compote to cool to room temperature. Once cooled, refrigerate until ready to serve.
