Prepare Chocolate

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.
Whip Cream and Eggs

Whip the Cream
In a large mixing bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.

Beat the Eggs and Sugar
In another bowl, beat the eggs and granulated sugar together until pale and fluffy.
Combine Ingredients

Mix Chocolate with Eggs
Gently fold the melted chocolate into the egg mixture until well combined.

Add Hazelnut Mixture
Fold in the ground hazelnuts and hazelnut extract into the chocolate-egg mixture.

Incorporate Whipped Cream
Gently fold the whipped cream into the mixture in three additions until fully incorporated and smooth.
Chill and Serve

Chill the Mousse
Divide the mousse mixture into serving cups or bowls and refrigerate for at least 2 hours or until set.

Before serving, garnish each mousse with whole hazelnuts and a dusting of cocoa powder.
