Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 220°C (425°F) and prepare four ramekins by greasing them with butter and lightly dusting with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. Let it cool slightly.

  3. 3

    Mix Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, granulated sugar, and salt until combined.

  4. 4

    Combine Mixtures

Add the melted chocolate mixture to the dry ingredients and mix until fully incorporated.

  5. 5

    Add Eggs and Vanilla

Add the large eggs, egg yolk, and vanilla extract to the batter. Mix until the batter is smooth and well combined.

Baking

  1. 6

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm while the center remains soft.

  3. 8

    Cool Slightly

Remove the cakes from the oven and let them cool for 1-2 minutes before inverting onto plates.

Serving

  1. 9

    Serve with Ice Cream

Carefully invert each ramekin onto a plate, allowing the molten center to flow out. Serve immediately with a scoop of vanilla ice cream on the side.
