Cannoli Shells

Prepare the Dough
In a mixing bowl, combine the flour, sugar, cocoa powder, and salt. Mix well.

Add Wet Ingredients
Add the egg yolks, white wine (or vinegar), melted butter, and water to the dry ingredients. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Dough
After resting, roll out the dough to about 1/8 inch thick. Cut into circles (about 4 inches in diameter).

Shape the Shells
Wrap each circle around a cannoli tube and seal the edges with a bit of water. Make sure the seam is on the bottom.

Fry the Shells
Heat oil in a deep pan. Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Allow to cool before removing the tubes.

Prepare the Filling
In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Add Mix-ins
Divide the filling into four bowls. Stir in chocolate chips in one, chopped pistachios in another, candied citron peel in the third, and maraschino cherries in the last.

Fill the Cannoli
Using a piping bag or a spoon, fill the cannoli shells with the respective fillings.
