Method

Chips Preparation

  1. 1

    Cut the Tortillas

Stack the corn tortillas and cut them into quarters to create triangle shapes.

  2. 2

    Heat the Oil

In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the Chips

Carefully add a handful of tortilla triangles to the hot oil, frying them in batches. Fry until golden brown and crispy, about 2-3 minutes.

  4. 4

    Drain and Season

Using a slotted spoon, transfer the fried chips to a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt while they are still hot.

Salsa Preparation

  1. 5

    Chop the Vegetables

Dice the ripe tomatoes, finely chop the red onion, and mince the jalapeño pepper (removing seeds if you prefer less heat).

  2. 6

    Mix Ingredients

In a mixing bowl, combine the diced tomatoes, chopped red onion, minced jalapeño, and finely chopped fresh cilantro.

  3. 7

    Season the Salsa

Squeeze the juice of one lime over the mixture and add 1 tsp of salt. Stir well to combine all the ingredients.

  4. 8

    Let it Sit

Allow the salsa to sit for at least 10 minutes to let the flavors meld before serving.
