Preparation of Chicken

Marinate the Chicken
In a bowl, combine the chicken breasts with 1 tablespoon of olive oil and 2 tablespoons of fajita seasoning. Mix well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Sauté the Vegetables
While the chicken is grilling, slice the bell peppers and onion into thin strips. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and peppers, and sauté for about 5-7 minutes, until they are softened and slightly caramelized. Season with salt and pepper to taste.

Assemble the Fajitas
Warm the tortillas in a dry skillet or in the microwave. To assemble, place a portion of the sautéed vegetables on a tortilla, followed by slices of the grilled chicken. Add any optional toppings as desired, such as sour cream, salsa, shredded cheese, and cilantro.
