1. Combine Ingredients
In a shaker, combine the pisco, house-made Ancho Reyes, pineapple juice, fresh lemon juice, egg white, and simple syrup.
2. Dry Shake
Perform a dry shake (without ice) for about 15 seconds to emulsify the egg white and create a frothy texture.
3. Shake with Ice
Add ice to the shaker and shake vigorously for another 15-20 seconds until well chilled.
4. Strain
Double strain the mixture into a chilled coupe or cocktail glass to ensure a smooth texture.
5. Garnish
Add a couple of dashes of Angostura bitters on top of the foam for garnish.
6. Serve
