Sponge Cake

Prepare and preheat
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan and line the bottom with parchment for easier removal.

In a large mixing bowl, beat the 5 eggs and 1 cup granulated sugar together on high speed for 6–8 minutes until thick, pale, and tripled in volume (ribbon stage). Add 1 tsp vanilla and mix to incorporate.

In a separate bowl, whisk together 1 cup all-purpose flour, 1 tsp baking powder, and 1 tsp salt. Sift or gradually fold dry ingredients into the egg mixture in 2 additions, using a large spatula and folding gently to retain air.

Pour batter into prepared 9x13 pan and smooth the top. Bake 20–25 minutes until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Pineapple Filling

While cake bakes, prepare pineapple filling. In a small saucepan, combine 1 cup crushed pineapple (drained), 2 tbsp sugar, 1 tsp cornstarch, and 1 tsp lemon juice. If the drained pineapple left 2 tbsp juice, add it too.

Cook over medium heat, stirring frequently, until mixture thickens slightly and becomes glossy, about 3–5 minutes. Remove from heat and cool to room temperature. This keeps the pineapple from making the cake soggy while concentrating flavor.

When cake has cooled 10 minutes after baking, spread the cooled pineapple filling in an even layer over the cake surface, leaving a small margin at the edges.
Three Milks Soak

Whisk together 1 cup sweetened condensed milk, 1 cup evaporated milk, 1 cup whole milk (or heavy cream for richer results), and 1 cup pineapple juice until fully combined and smooth.

Slowly pour the milk mixture evenly over the pineapple-topped cake, starting at the edges and moving toward the center. Pour in three stages, allowing the cake to absorb between pours so it soaks thoroughly without pooling on top.

Cover the cake with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the tres leches to fully saturate and chill.
White Chocolate Whipped Topping

Chop 6 oz white chocolate finely. Place in a heatproof bowl.

Heat 1/2 cup of the heavy cream to a simmer (do not boil). Pour the hot cream over the chopped white chocolate and let sit 1 minute, then stir gently until smooth to make a white chocolate ganache. If needed, gently warm the bowl over a double boiler to finish melting.

Cool the ganache to room temperature (it will thicken). Meanwhile, chill your mixing bowl and whisk or beaters for 10 minutes in the fridge for better whipping.

Whip the remaining 1.5 cups heavy cream with 1 tbsp powdered sugar (optional) and 1 tsp vanilla until soft peaks form.

Fold the cooled white chocolate ganache into the whipped cream gently until evenly combined and smooth. Taste and adjust sweetness if needed.

Once the cake has chilled and absorbed the milk, spread the white chocolate whipped topping evenly over the cake, using an offset spatula to create soft peaks or decorative swirls.
Finishing & Garnish

If using, toast 1 cup shredded coconut in a dry skillet over medium heat, stirring frequently until golden and fragrant, about 3–5 minutes. Cool.

Sprinkle the toasted coconut over the whipped topping, arrange pineapple chunks or rings decoratively, and tuck fresh mint leaves around as desired.

Keep the finished Tres Leches refrigerated. For best texture and flavor, serve chilled within 3–4 days.
