    Mix pattie ingredients

    In a large bowl combine ground beef, grated onion, minced garlic, chopped parsley, egg, breadcrumbs, Worcestershire sauce, kosher salt, and black pepper. Use your hands or a fork to mix gently until just combined; avoid overworking to keep patties tender.

    Form patties

    Divide the mixture into 4 equal portions (about 4 oz each) and gently form into round patties about 3½ inches wide and ¾ inch thick. Make a slight indentation in the center of each patty with your thumb to prevent doming while cooking.

    Preheat pan

    Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tablespoon olive oil and let it heat until shimmering.

    Cook patties

    Place the patties in the hot pan without overcrowding. Cook for 3–4 minutes on the first side until a brown crust forms. Flip and cook 3–4 minutes more for medium doneness (internal temperature about 160°F / 71°C for ground beef). Adjust time for desired doneness. If making more than 4, cook in batches and keep finished patties tented with foil to rest.

    Rest patties

    Transfer cooked patties to a plate and let rest for 5 minutes before serving so the juices redistribute.

Green Sauce

    Prepare herbs and aromatics

    Rinse cilantro, parsley, and mint (if using) and shake or pat dry. Peel the garlic cloves and roughly chop the jalapeño, removing seeds if you prefer milder heat.

    Blend sauce

    In a food processor or blender combine cilantro, parsley, mint, garlic, jalapeño, Greek yogurt, olive oil, lemon juice, red wine vinegar, ground cumin, salt, and black pepper. Pulse until the mixture is smooth but still bright green. Scrape down the sides as needed.

    Adjust consistency and seasoning

    If the sauce seems too thick, add water 1 tablespoon at a time to reach a drizzleable consistency (about 1–2 tablespoons). Taste and adjust salt, lemon, or spice as needed.

    Chill briefly

    Transfer the sauce to a bowl and chill for 10–15 minutes if time allows to let flavors meld. The sauce can be used immediately.
