Rum-infused Apple-Guava Cocktail Base

    Measure and combine

    In a cocktail shaker or mixing jug, pour 6 fl oz aged dark rum, 4 fl oz fresh apple juice, 3 fl oz guava nectar, and 1 fl oz fresh lime juice.

    Sweeten and flavor

    Add 0.75 fl oz demerara or light brown sugar syrup, 3 dashes Angostura bitters, 0.125 tsp vanilla extract, a pinch of ground allspice, and 0.125 tsp freshly grated nutmeg to the shaker or jug.

    Chill and marry

    Add a handful of ice to the shaker and stir gently for 15–20 seconds (or shake briefly if you prefer a slightly frothier texture) to chill and lightly dilute the mixture so flavors marry.

    Prepare glassware

    Fill two rocks glasses or double old-fashioned glasses with crushed ice (about 1 cup crushed ice per glass).

    Double-strain the chilled cocktail base evenly between the two prepared glasses over the crushed ice to keep any solids out of the drink.
