Remove the Wagyu flat iron steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

Season the steaks generously with salt and black pepper on both sides.

Making the Béarnaise Sauce

Prepare Shallot Reduction
In a small saucepan, combine minced shallots, white wine vinegar, and dry white wine. Bring to a simmer over medium heat and reduce until the liquid is nearly evaporated, about 5-7 minutes. Remove from heat and let cool slightly.

In a heatproof bowl, whisk together the egg yolks and the cooled shallot reduction. Place this bowl over a pot of simmering water (double boiler). Whisk continuously until the mixture thickens and becomes pale, about 3-5 minutes.
