Prepare the Spaetzle Batter

In a large mixing bowl, combine the all-purpose flour, eggs, milk, salt, and black pepper. Mix until smooth and well combined. Let the batter rest for 30 minutes.

Cook the Spaetzle

Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through into the boiling water. Cook until the spaetzle float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Sauté the Shallots

In a large skillet over medium heat, melt the butter. Add the diced shallots and sauté until translucent, about 3-4 minutes.

Combine with Crab and Lemon

Add the cooked spaetzle to the skillet with the shallots. Gently fold in the crab meat and preserved lemon. Cook for an additional 2-3 minutes until heated through.

Finish and Serve

Remove from heat, sprinkle with chopped chives, and serve warm. Enjoy your Crab Spaetzle!
