Finely chop the beef tenderloin with a sharp knife to achieve a tartare consistency. Aim for small, uniform pieces.

Finely chop the capers and shallots, ensuring they are small enough to mix well with the beef.

In a medium bowl, combine the chopped beef, capers, shallots, Dijon mustard, Worcestershire sauce, egg yolk, and fresh parsley. Mix gently until all ingredients are evenly incorporated.
