    Prepare the Potatoes

    Peel and cut the potatoes into thin strips to make fries.

    Soak the Potatoes

    Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Preheat the Oil

    In a deep fryer or large pot, heat enough oil to cover the fries at 350°F (175°C).

    Fry the Potatoes

    Drain the potatoes and pat them dry. Fry them in the hot oil in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt and toss to coat.

    Prepare the Steak

    While the fries are cooking, season the ribeye steaks generously with salt and black pepper on both sides.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Add the steaks to the skillet and sear for about 4-5 minutes on each side for medium-rare, flipping once.

    In the last couple of minutes of cooking, add the garlic cloves and rosemary to the pan and baste the steaks with the melted butter.

    Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
