Prepare the Glass
Start by selecting a tall glass or a highball glass. Fill it with ice cubes to chill the glass.

Mix the Cocktail
In a cocktail shaker, add 2 oz of Sobieski Vodka, 1 oz of fresh lemon juice, and 0.5 oz of simple syrup. Add a few fresh mint leaves.

Shake the Mixture
Fill the shaker with ice and shake vigorously for about 15-20 seconds to combine the ingredients and chill the mixture.

Strain the Mixture
Strain the mixture into the prepared glass filled with ice cubes. Make sure to leave some space at the top of the glass.

Top with Club Soda
Pour 2 oz of club soda over the top of the strained cocktail to add fizz.

Garnish and Serve
Garnish with a lemon wedge and a sprig of mint. Serve immediately with a straw or stirring stick.
