Seared Foie Gras with Prosciutto Grilled Cheese and Pineapple Mostarda

Prepare the Pineapple Mostarda
In a saucepan, combine the diced pineapple, sugar, apple cider vinegar, mustard seeds, and ground mustard. Bring to a simmer over medium heat and let it cook for about 10 minutes, or until the pineapple is tender and the mixture has thickened slightly. Remove from heat and let cool.

Prepare the Prosciutto Grilled Cheese
In a skillet, melt 1 tablespoon of butter over medium heat. Assemble the grilled cheese by placing a slice of sourdough bread in the skillet, followed by 2 ounces of Gruyère cheese, 2 slices of prosciutto, and another slice of bread on top. Cook until golden brown, about 3-4 minutes, then flip and cook the other side until golden and the cheese is melted. Repeat for the second sandwich.

Sear the Foie Gras
Meanwhile, season the foie gras with salt and black pepper. In another skillet over medium-high heat, add the remaining tablespoon of butter. Once the butter is hot and bubbling, add the foie gras and sear for 30-60 seconds on each side until nicely browned and crispy. Remove from heat.

Plate the Dish
On a serving plate, place the grilled cheese sandwich and top it with the seared foie gras. Spoon some of the pineapple mostarda on the side or drizzle it over the foie gras for added flavor. Serve immediately.
