Cook the Quinoa
Rinse 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare the Vegetables
While the quinoa is cooking, wash and chop the cherry tomatoes in half, dice the cucumber, and chop the bell pepper into small pieces. Set aside.

Make the Dressing
In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, salt, and black pepper to taste.

Combine Ingredients
Once the quinoa has cooled slightly, fluff it with a fork. In a large bowl, combine the cooked quinoa, chopped cherry tomatoes, cucumber, bell pepper, and fresh parsley. Pour the dressing over the salad and toss gently to combine.

If using, sprinkle the feta cheese on top of the salad. Serve immediately or refrigerate for up to an hour to let the flavors meld together.
