Gnocchi

Method

Gnocchi

  1. 1

    Prepare the Ricotta Mixture

In a large mixing bowl, combine the ricotta cheese, egg, and salt. Mix until smooth and well incorporated.

  2. 2

    Add Flour

Gradually add the all-purpose flour to the ricotta mixture, mixing with a spatula or your hands until a dough forms. You may need to adjust the flour amount slightly depending on the moisture of the ricotta.

  3. 3

    Knead the Dough

Lightly flour a clean surface and transfer the dough onto it. Gently knead the dough for about 2-3 minutes, just until it comes together. Be careful not to overwork it.

  4. 4

    Shape the Gnocchi

Divide the dough into 4 equal pieces. Roll each piece into a long rope, about 1/2 inch thick. Cut the rope into 1-inch pieces to form the gnocchi.

  5. 5

    Shape the Gnocchi

To create the classic gnocchi shape, press each piece with the tines of a fork. This will create ridges that help hold the sauce.

  6. 6

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water in batches. Cook for about 2-3 minutes, or until they float to the surface. Use a slotted spoon to remove them and set aside.
