    Prepare the Panna Cotta

    In a small bowl, soak the gelatin sheets in cold water for about 5 minutes until soft.

    Heat the Cream and Milk

    In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar has dissolved and the mixture is hot but not boiling.

    Combine Gelatin and Mixture

    Remove the saucepan from heat. Squeeze the excess water from the gelatin sheets and add them to the hot cream mixture, stirring until completely dissolved.

    Add Honey and Lime Zest

    Stir in the honey and lime zest until well combined. Allow the mixture to cool slightly.

    Pour into Molds

    Pour the panna cotta mixture into serving molds or cups. Refrigerate for at least 4 hours, or until set.

    Make Coconut Crumble

    In a skillet, melt the butter over medium heat. Add the coconut flakes and toast until golden brown, stirring frequently. Remove from heat and let cool.

    Prepare Passionfruit Caramel

    In a saucepan, heat the passionfruit puree over medium heat until it thickens slightly, about 5-7 minutes. Remove from heat.

    Assemble the Dessert

    Once the panna cotta is set, carefully unmold them onto plates. Drizzle with the passionfruit caramel, and sprinkle with toasted coconut crumble. Top with diced kiwi and lychee.
