Pancake Batter

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Mix Batter
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Add Sprinkles
Gently fold in the rainbow sprinkles into the batter.

Prepare Pan
Heat a non-stick skillet or griddle over medium heat. Add the unsalted butter and let it melt, coating the surface.

Cook Pancakes
Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

Serve
Remove pancakes from the skillet and keep warm while repeating with remaining batter.
Strawberry Syrup

Prepare Strawberries
Wash and hull the fresh strawberries, then chop them into quarters.

Cook Syrup
In a small saucepan, combine the chopped strawberries, granulated sugar, and water. Cook over medium heat, stirring occasionally, until the mixture starts to simmer.

Thicken Syrup
Reduce the heat to low and let it simmer for about 10 minutes until the strawberries break down and the syrup thickens.

Strain Syrup (Optional)
For a smoother syrup, strain the mixture through a fine mesh sieve, pressing down on the solids to extract as much juice as possible.

Let the syrup cool before serving.

In a medium bowl, pour the heavy whipping cream and add the powdered sugar and vanilla extract.

Beat Until Stiff Peaks
Using an electric mixer, beat the cream on high speed until stiff peaks form. Be careful not to overbeat.
