Method

Dumpling Dough Preparation

  1. 1

    Make the Dough

In a large bowl, mix together all-purpose flour and salt. Create a well in the center and add eggs and water. Gradually mix the flour into the eggs until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Foie Gras Filling Preparation

  1. 3

    Prepare the Filling

In a mixing bowl, combine foie gras, heavy cream, salt, black pepper, and chopped chives. Mix until smooth and fully integrated.

  2. 4

    Chill the Filling

Cover the foie gras mixture and chill in the refrigerator for at least 30 minutes to firm up.

Dumpling Assembly and Cooking

  1. 5

    Roll Out the Dough

After resting, roll out the dough on a floured surface to about 1/8 inch thick. Use a round cutter to cut out circles (about 3 inches in diameter).

  2. 6

    Fill the Dumplings

Place a small spoonful of the foie gras filling in the center of each dough circle. Fold the dough over to form a half-moon shape and pinch the edges to seal.

  3. 7

    Cook the Dumplings

Bring a pot of salted water to a gentle boil. Cook the dumplings in batches for about 4-5 minutes or until they float. Remove with a slotted spoon and set aside.

Sauce Preparation

  1. 8

    Make the Sauce

In a saucepan, melt butter over medium heat. Add finely chopped shallots and sauté until translucent.

  2. 9

    Add Liquids

Pour in the white wine and reduce by half. Add chicken stock and thyme, and let simmer for 10 minutes. Season with salt and pepper to taste.

Serving

  1. 10

    Plate the Dish

Place the cooked dumplings on a serving plate and drizzle with the sauce. Garnish with additional chives if desired.

  2. 11

    Serve

Serve immediately while hot, allowing guests to enjoy the rich flavors of the foie gras dumplings.
