Duck Stack Ingredients

Method

Duck Stack Directions

  1. 1

    Prepare the Duck

Start by scoring the skin of the duck breasts in a crosshatch pattern. Be careful not to cut into the meat.

  2. 2

    Season the Duck

Rub the duck breasts generously with salt and black pepper, ensuring an even coating.

  3. 3

    Sear the Duck

In a skillet, heat olive oil over medium-high heat. Add the duck breasts skin-side down and sear for about 6-8 minutes until the skin is crispy and golden brown.

  4. 4

    Cook the Duck

Flip the duck breasts and reduce the heat to medium. Add minced garlic and fresh thyme to the skillet. Cook for an additional 5-7 minutes until the internal temperature reaches 135°F (57°C) for medium rare.

  5. 5

    Glaze the Duck

Remove the duck from the skillet and let rest. In the same skillet, add honey and balsamic vinegar, stirring to combine. Let it simmer for about 2 minutes until slightly thickened.

  6. 6

    Prepare the Pineapple

In the same skillet, add pineapple rings and cook for about 2-3 minutes on each side until caramelized.

  7. 7

    Assemble the Duck Stack

Slice the duck breasts thinly and layer them on top of the caramelized pineapple rings. Drizzle the honey-balsamic glaze over the top and garnish with fresh cilantro.
